  2. Cook the Salmon: In a separate pan, heat a little oil over medium heat. Add the salmon fillets and cook for about 4-5 minutes on each side until cooked through. Remove and set aside.
  3. Make the Curry Sauce: In the same pan, add coconut milk, red curry paste, fish sauce, lime juice, and ginger. Stir well and let it simmer for about 5 minutes until slightly thickened.
  4. Combine: Place the salmon back into the pan with the curry sauce, spooning the sauce over the fillets. Cook for an additional 2 minutes to warm through.
  5. Serve: Plate the cauliflower rice, top with the coconut curry salmon, and garnish with fresh cilantro and lime wedges. Enjoy!
