This Creamy Spinach and Ricotta Lasagna Soup is a delightful twist on the classic lasagna. It combines the comforting flavors of traditional lasagna with a light and creamy broth, making it perfect for any day of the week. Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 oz pasta (your choice)
  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the vegetable broth, crushed tomatoes, oregano, and basil. Bring to a boil.
  4. Once boiling, add the pasta and cook according to package instructions until al dente.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Remove from heat and stir in the ricotta and Parmesan cheese until well combined. Season with salt and pepper to taste.
  7. Serve hot, garnished with extra Parmesan if desired.
