This roasted chicken is a true crowd-pleaser! The combination of garlic and rosemary creates a mouthwatering aroma that fills your kitchen. Serve it with your favorite sides for a comforting meal.

Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 lemon, halved
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 1 onion, quartered

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix olive oil, garlic, rosemary, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
  3. Stuff the chicken cavity with lemon halves and onion quarters. Place the chicken in a roasting pan and surround it with baby potatoes.
  4. Roast in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 10 minutes before carving. Enjoy your delicious meal!
