Ingredients
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, pitted and sliced
- 1/2 cup corn (fresh or canned)
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the Quinoa: In a medium saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy. Remove from heat and let it cool.
- Prepare the Vegetables: While the quinoa cools, chop the cherry tomatoes, cucumber, bell pepper, red onion, and olives. In a large bowl, combine all the chopped vegetables and corn.
- Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
