Zucchini Noodles: A Low-Carb Lasagna Alternative

A plate of zucchini noodle lasagna topped with fresh basil.

Switching to zucchini noodles is a fun way to enjoy lasagna without the carbs. These noodles are light, fresh, and soak up all the delicious flavors of the sauce. Plus, they add a nice crunch to the dish!

To make zucchini noodles, simply slice fresh zucchini into thin strips using a mandoline or a vegetable peeler. You can also spiralize them for a fun twist. The key is to salt the zucchini noodles lightly and let them sit for about 10 minutes. This helps draw out excess moisture, preventing your lasagna from getting soggy.

Ingredients

  • 3 medium zucchinis
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis into thin strips or spiralize them. Sprinkle with salt and let sit for 10 minutes. Pat dry with a paper towel.
  3. In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper until well combined.
  4. Spread a layer of marinara sauce on the bottom of a baking dish. Layer zucchini noodles, ricotta mixture, and mozzarella cheese. Repeat layers, finishing with marinara and mozzarella on top.
  5. Bake for 30-35 minutes until the cheese is melted and bubbly. Let it cool for a few minutes before slicing.
