Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 package (9 oz) four-cheese tortellini
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add vegetable broth, diced tomatoes, dried basil, and oregano. Bring to a simmer.
  4. Once simmering, add the four-cheese tortellini and cook according to package instructions, usually about 3-5 minutes.
  5. Stir in heavy cream and season with salt and pepper. Heat through.
  6. Serve hot, garnished with fresh basil leaves.
