  • 1 cup rolled oats
  • 1/2 cup coconut oil melted
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/4 cup honey or maple syrup (for filling)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
