Ingredients

  • 1 package of puff pastry (2 sheets), thawed
  • 1 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (like thyme or parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface. Cut into squares and press them into a greased muffin tin.
  3. In a bowl, mix the chopped spinach, ricotta, cream cheese, Parmesan, beaten egg, garlic powder, salt, and pepper until well combined.
  4. Fill each pastry cup with the spinach mixture, being careful not to overfill.
  5. Bake for 20-25 minutes or until the pastry is golden brown and the filling is set.
  6. Let them cool slightly before removing from the tin. Garnish with fresh herbs and serve warm.
