Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups chopped cauliflower
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • Fresh parsley for garnish (optional)

Instructions

  1. Sear the Beef: In a large pot, heat olive oil over medium-high heat. Add beef cubes and sear until browned on all sides. Remove and set aside.
