  • ½ cup powdered sweetener
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups mixed berries (strawberries, blueberries, blackberries)

Instructions

  1. Prepare the Crust: In a bowl, combine almond flour, melted butter, and sweetener. Press the mixture into the bottom of a springform pan to form the crust.
  2. Make the Filling: In a separate bowl, beat the softened cream cheese, powdered sweetener, and vanilla extract until smooth. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Assemble the Cheesecake: Pour the filling over the crust in the springform pan. Smooth the top with a spatula and refrigerate for at least 4 hours or until set.
  4. Top with Berries: Once set, remove the cheesecake from the pan and top with fresh mixed berries. Serve chilled and enjoy!
